You will be asked for this recepit by anyone who eats it

 Today is Easter Eve and we have been in the kitchen all afternoon prepping for tomorrow's meal. We did something easy peasy for dinner tonight, sloppy joe tacos, and this is what everyone has been craving for dessert recently and it went perfectly. Now we like the cheesecake filling to be a mile high like real cheesecake so I double the cream cheese, sugar and vanilla. The rest stays the same. This is ohhh so yummy and is great for pot lucks and is even better cold so great for picnics.
Strawberries were on sale at the store so I made some topping out of the smaller ones. I just slice them into small peices and mix them with strawberry preserves... poof a sweet topping.


Sopapilla Cheesecake 
2 (8 ounce) packages cream cheese
2 (8 ounce) packages refrigerated crescent dinner rolls
1 cup sugar
1 teaspoon vanilla extract
1/2 cup butter, melted
1/2 cup cinnamon sugar

 


Directions:
      Lightly spray a 9 x 13 baking pan with cooking oil .
  •   Unroll crescent rolls and line the bottom of the pan.
  •   Mix ( stand or hand ) together the cream cheese, sugar and Vanilla.
  •   Spread over the crescent rolls.
  •   Unroll the other can of crescent rolls and place on top of cream cheese mixture.
  •  Sprinkle with the cinnamon sugar mixture  and then drizzle the melted butter over the top. .
  •   Bake at 350 degrees for 30 minutes. 







 Harli was my beautiful assistant today. She is using a cinnamon sugar spice container we keep for times like this.


  


Done baking now cooling while we eat dinner. Was hard not to start with dessert.

No justice

I just learned that my sister's death has been given a ruling. After almost 3 months this is the most blatant lack of police work I have ever witnessed. From the moment we were told our sister was dead the Shawnee police have failed her. They failed her the moment they received the call.
I have been told so many things from so many people.... we are a small town compared to some and word travels fast. If what I have been told is true then I know that Shawnee's police department is one huge ball of fail ! How do you not lock a crime scene down? How do you walk into a room and make a call on how someone died with out even looking for evidence?  !!!!!!!! I am just so angry !!!!!!   She deserves justice and she will have it!! For her kids, for her husband ,for her family!

Hummus my addiction

Hi my name is Christi and I am full on addicted to hummus. There could be worse things I was addicted to like collecting blades of grass or watching that boo kid on tv*cringes*. The best part of my addiction is it is healthier then  what I used to snack on ...  things like chips or cookies. What is even better is the spawn are addicted to. Wait that is not actually a good thing cause they freaken eat it all. 

Ok now back to topic here... I have another addiction .... Pinterest. Ya I KNOW I am not alone here. O,o
Anywho....  I found a recipe for Avocado hummus!! Ohhhhh lord of the rings can this be true!!!
 * angels start to sing and you can feel the world bouncing in excitement with you * It is so yummo that Hachi said she liked it more then regular guacamole after the tasting. 
 So can you tell we lika the green fruit? *grin*
Sooo here you go I am sharing my version of what I found on Pinterest. 



  Avocado Hummus

Cooking Instructions:
1. Add the following to your food processor:

  •         -1 can of white beans, drained and rinsed
  •         -1 avocado
  •         -juice of or equal to 1/2 of a lime or lemon
  •         -1/2 teaspoon sea salt
  •         -1/4 teaspoon cayenne pepper
2. Blend until smooth



Best invention ever!!

Who ever came up with Breakfast for Dinner is like a super hero to my family. This is one of the top 10 dinners ever. Now each breakfast for dinner is different. On this day it was made up of Bacon Wrapped Egg Nests and fried potatoes. I also made some Waffle Iron Cinnamon rolls to either have with dinner or as dessert later in the eve. Ohhh and the person who came up with the waffle iron thing is also a super hero cause we LOVE this method. So now that I have you hungry here is our cast of players.....








Egg Nests 

dozen eggs
bacon

spray oil

cup cake tins

Preheat oven to 350 degrees.
Spray cupcake tins with oil. 
Cut bacon in half width wise. Wrap cups with a slice of bacon. 
Crack one egg into each cup.
 Bake for 30 min.




Fried potatoes are done by package directions and luck. I say luck because we have never had them turn out as perfectly as they did today. Dragon was under pressure cause he knew I was taking a picture for the blog. HE DID GREAT!!! 
We wish you luck in your frying as well. Believe me we wish you ALL the Luck in not having potato mush. LOL!


Waffle Iron Cinnamon Rolls 

Can of cinnamon rolls 
waffle iron 
spray oil

 
heat waffle iron
open can of rolls and separate putting the glaze to the side
spray heated iron with spray oil
place two rolls per waffle well ( picture provided)
cook for two minutes ... now due to all irons being different, mine being one of those 10 cheap ones from black friday craziness ... hey it works :P check if  the waffle is golden brown  if not cook for 1 more minute.

WORD OF WARNING!!! Your iron needs to be sprayed after every set. I am sorry but you are just going to have to deal with this truth unless you want broken ugly waffle rolls.

This has been on my mind since watching DWTS with my daughter last night. When this season started I had to explain who Andy Dick was....he had made some very wrong choices in life and those choices had made him a nasty person who was mean and destructive to not only others but to himself. I then added how he is back to getting his life on track and then Andy's 1st intro video came on tv. She and I both lit up and said RIGHT ON!!! What I am so proud of my daughter knowing and understanding is we all fall ... we all are weak .... BUT we are also strong and with the support and the love of not only ourselves but of others we CAN lift ourselves from the dirt and brush ourselves off and go forward. I am also so proud that she knows that NO MATTER WHAT I will always love her and be there for her. ( all my babies know this )

We watched Andy dance last night. He may not have been perfect but he was on that dance floor and in our eyes he might as well have been flying for he has come so far and is showing to himself just how strong he is. He is such an inspiration to so many going through self destructive addictions. Heck he is an inspiration to all of us for not one person has not gone through a trial in life and breathed a sigh of relief when making it out the other side.

I just want to say BE STRONG everyone. Life gets rough and nasty but it does get better.
