A happy man in my house needs 2 things




Chocolate and Peanut Butter. 

WHAT!! Oh EM Geebus you really need to think better of me... ok well just this once ok. LOL! 

I had the WHOLE crew in house for a 4 day weekend. Add in that it was a holiday and I had better have some wonderful dessert that will keep those sweet teeth happy if I ever want peace. Oh boy did I have one .... it had me drooling while prepping it. 
So without further ado here it is folks 

Brownie Peanut Butter Dream

Bottom layer-
2 boxes of moist brownie mix, Follow the directions on the box.... BOTH boxes should equal 2 eggs , 1/2 cup oil , 1/2 cup water ... if yours is more then cool FOLLOW the directions on the mix YOU have.

Topping-
1 cup peanut butter NOT natural it will not mix well the oil just doesn't play well with others.
 8oz cream cheese , room temp
2 cups powdered sugar 
1 small tub whipped topping , thawed


Prepare the Brownies according to instructions on the box, only you will be baking them into a 13x9 greased pan. Bake in a 350 degree oven for 35 min or until a toothpick comes out clean.
Brownies need to be COMPLETELY cooled before you can add topping.

Mix, with a stand or hand mixer,  the cream cheese and peanut butter together till smooth adding in the powdered sugar 1/2 cup at a time. Once this is mixed well fold in , BY HAND, the whipped topping. 
Spread the topping mixture onto the cooled brownies evenly.
Feel free to drizzle melted chocolate on top or add chopped peanuts or heck do both. : )

Let sit ,covered, in the chill box for atleast 4 hours before serving.


Walking on the Man side of dinner


One of the manly requests in the house is meatball subs. Only issue is when feeding 7 people how to make it a cheap meal because it is already super easy. I saw a couple ideas on Pinterest and this is what I ended up with. Easy , tasty and feeds a crowd ... or my family. 

Meatball Sub Casserole


List of players


1 loaf of italian bread , Sliced (16 slices) and cut into cubes
1 bag of prepared meatballs , thawed
8 oz cream cheese , room temp
1 cup mayonnaise 
2 tbls dry Italian seasoning
32 oz of your favorite spaghetti sauce
2 cups shredded mozzarella cheese

Preheat oven to 350 degrees.
Spray two 13x9 baking dishes with oil. 
Layer your cubed bread evenly into the bottom of both dishes trying to make a single layer with not much overlapping. 
Mix  the cream cheese, mayo and seasoning in a bowl. Spread this mixture evenly onto the bread cubes of both pans. This is a fun task that is worth it use a metal spoon .... it helps. :D
Pour spaghetti sauce into a large bowl.
Cut each meatball in half and add to spaghetti sauce. 
Pour the meat and sauce evenly onto the layers in pans.
Top with shredded cheese 
Bake in oven for 25 - 30 min or until bubbly

Feeds 8 with left overs for work lunches
Can also be served with Salad

Happy Independence Day... a little late



It has been a really nice little vacation for us. Dave took Friday off and we have spent it relaxing, crocheting , cooken and watching people burn money. A nice 3 days and am looking forward to day 4 tomorrow.

I have a lot to write up I am so far behind. A few new dinners and a couple new desserts. One I am actually baking right now. Yes at 10:30 at night. When else is the best time to bake?? Quiet AND cool enough to run the oven and not run up the electric bill. Anywho I am hoping to sit down and write the new entries tomorrow.

Till then I am headed to snoogle up and watch a movie with the fam.
