A happy man in my house needs 2 things




Chocolate and Peanut Butter. 

WHAT!! Oh EM Geebus you really need to think better of me... ok well just this once ok. LOL! 

I had the WHOLE crew in house for a 4 day weekend. Add in that it was a holiday and I had better have some wonderful dessert that will keep those sweet teeth happy if I ever want peace. Oh boy did I have one .... it had me drooling while prepping it. 
So without further ado here it is folks 

Brownie Peanut Butter Dream

Bottom layer-
2 boxes of moist brownie mix, Follow the directions on the box.... BOTH boxes should equal 2 eggs , 1/2 cup oil , 1/2 cup water ... if yours is more then cool FOLLOW the directions on the mix YOU have.

Topping-
1 cup peanut butter NOT natural it will not mix well the oil just doesn't play well with others.
 8oz cream cheese , room temp
2 cups powdered sugar 
1 small tub whipped topping , thawed


Prepare the Brownies according to instructions on the box, only you will be baking them into a 13x9 greased pan. Bake in a 350 degree oven for 35 min or until a toothpick comes out clean.
Brownies need to be COMPLETELY cooled before you can add topping.

Mix, with a stand or hand mixer,  the cream cheese and peanut butter together till smooth adding in the powdered sugar 1/2 cup at a time. Once this is mixed well fold in , BY HAND, the whipped topping. 
Spread the topping mixture onto the cooled brownies evenly.
Feel free to drizzle melted chocolate on top or add chopped peanuts or heck do both. : )

Let sit ,covered, in the chill box for atleast 4 hours before serving.


Walking on the Man side of dinner


One of the manly requests in the house is meatball subs. Only issue is when feeding 7 people how to make it a cheap meal because it is already super easy. I saw a couple ideas on Pinterest and this is what I ended up with. Easy , tasty and feeds a crowd ... or my family. 

Meatball Sub Casserole


List of players


1 loaf of italian bread , Sliced (16 slices) and cut into cubes
1 bag of prepared meatballs , thawed
8 oz cream cheese , room temp
1 cup mayonnaise 
2 tbls dry Italian seasoning
32 oz of your favorite spaghetti sauce
2 cups shredded mozzarella cheese

Preheat oven to 350 degrees.
Spray two 13x9 baking dishes with oil. 
Layer your cubed bread evenly into the bottom of both dishes trying to make a single layer with not much overlapping. 
Mix  the cream cheese, mayo and seasoning in a bowl. Spread this mixture evenly onto the bread cubes of both pans. This is a fun task that is worth it use a metal spoon .... it helps. :D
Pour spaghetti sauce into a large bowl.
Cut each meatball in half and add to spaghetti sauce. 
Pour the meat and sauce evenly onto the layers in pans.
Top with shredded cheese 
Bake in oven for 25 - 30 min or until bubbly

Feeds 8 with left overs for work lunches
Can also be served with Salad

Happy Independence Day... a little late



It has been a really nice little vacation for us. Dave took Friday off and we have spent it relaxing, crocheting , cooken and watching people burn money. A nice 3 days and am looking forward to day 4 tomorrow.

I have a lot to write up I am so far behind. A few new dinners and a couple new desserts. One I am actually baking right now. Yes at 10:30 at night. When else is the best time to bake?? Quiet AND cool enough to run the oven and not run up the electric bill. Anywho I am hoping to sit down and write the new entries tomorrow.

Till then I am headed to snoogle up and watch a movie with the fam.

What a May

May was quite a ride. As most everyone knows now , unless you have lived off the grid or in a galaxy far far away, we have had some record setting storms this past month. Most of which came too close to my home for my liking but what can you do. No I am not moving! *SMH* AND let me tell you that statement has been said to a lot of us Okies recently. And you know what.... we laugh. This is our home. It has it's issues but what state doesn't? Be it wind, water, shaking earth or fires , every state has something going on at some point. I am happy where I am at. Oklahoma is a great state and I am proud to call it home. 

Now I say this and no holding it against me when the heat of the summer kicks in cause it wont count then. *grins*

I am so glad we are getting sunshine. My poor yard needs to be mowed something awful. The backyard might now be a sanctuary for small monkeys the grass is so tall. I am looking forward to getting much needed yard work done this weekend. As I am sure everyone in our neighborhood is feeling cause I know I have seen some other sanctuaries growing on our street as well. LOL!

 Exciting news!!!



Beth's boyfriend Chris, who is also Adam's bud, has braved the Oklahoma weather and come to visit us. He is such a sweety and gentleman. He has fit right into our family like he has always been here. He sings at the drop of a hat .. like me. He has a good since of humor and is very polite. The best thing is he has Beth smiling and happy. Yes you read that right SMILING!! Oh and she hugs now. OK she hugs Chris but THAT is still hugging!! We are all enjoying him being here and he knows he is welcome here anytime.

Night My Freaky Darlings!!!

Sweet N Sour Chicken the Christi way YUMMO!

The whole family is addicted to this meal. We had made it as a side along with egg rolls the first time but it was SO good I changed it up and turned it into a main course. Super easy and addicting. 


Sweet and Sour Chicken over Fried Noodles

Feeds 6 
prep time- 15 min
Cook time-30 min

Sauce:
1 tbl soy sauce
1 tsp garlic 

3/4 cups white sugar
4 tbls ketchup

1/2 cup white distilled vinegar
 
In a bowl mix all sauce ingredients together with a wisk and set aside.



Chicken :
5 chicken breast cut unto 1 inch cubes
1 cup cornstarch
2 eggs, beaten
1/3 cup canola oil



Preheat oven to 350 degrees
Using tongs toss chicken in cornstarch , do this in small amounts to get a good coating on each piece. ( a breast at a time is perfect)
Mix the eggs and pour over the chicken, mixing to coat all the pieces.
Heat oil in large skillet. 
Cook chicken , enough to NOT over crowd pan, until browned. 
Place in a 13x9 baking dish.
Pour the sauce evenly over chicken. Turning the chicken so the sauce gets on both sides.
Bake in oven for 30 min , stirring the chicken half way through baking.






Noodles:
2 lbs of uncooked Linguini noodles
The next three ingrediants will need to be repeated for each 8 ounces of noodles cooked
1 teaspoon garlic
2 teaspoons soy sauce
1 tbl oil

While Chicken is baking in the oven, follow the cooking instructions for your linguini noodles.

Once they are cooked and drained. 
**Add garlic, soy sauce and oil to a skillet heating it on med sauteing for a 1 min.
Seperate your noodles into an amount that will cover the bottom of your skillet. About 8 ounces.
Toss with tongs till the noodles take on a LIGHT golden color. 3 to 4 min maybe less. Place fried noodles into a  serving bowl. Repeat from ** on untill all noodles have been cooked.  

Serve chicken over noodles. Enjoy!

When food talks



I still don't listen. LOL!

So today Beth and I were peeling potatoes for potato salad and look what we found in the bag. Of course we had to take a pic. She of course sent it to her bf ... I posted it on facebook saying that their plee for not being eaten was going ignored. LOL!


So how are you all doing? We here are doing good. Lots has been keeping us busy. End of school, tornadoes, planting our garden, family medical issues and getting ready for company. Life hands us , for lack of a better word, stuff and we can either deal with it or well deal with it....cause it sure aint going away.

We are all still coming out of shock at how close the trnadoes got to our home on Sunday and at how destructive the one that hit Moore was. I know that the one to hit Moore was an Ef 5 but I have not heard about the one that hit Shawnee and Bethal. I know it was strong enough to take brick homes down to their cement pads though.

We drive 1-77 everyday to get Dave from work and to see the trees look as if the expoloded is just amazing. We most definatly got VERY lucky. The whole time we watched the tv reporter ,who was sitting in the casino parking lot right down the road filming the funnel that wanted to get it's act together, we were talking to it.... please don't form...keep going down the highway...please don't come together. It didn't reform and this side of town was spared .... this time.

BUT in all the splinters and mud and insolation that was scattered all over you can see why I love living in this state. The PEOPLE. Now do not get me wrong I am not blind to the fact there are still jerks here but I can see that the good out number the bad 10 to 1. There have been a few looters and scammers but when I saw that 2500 volunteers had come to Shawnee to help our friends and loved ones I knew that my faith in humanity was not ill placed. Seeing the trucks filled with needs in the parking lot of the mall brought tears to my eyes. I just hope that all the poeple effected can find peace in all this.

We have a long road ahead of us but we will face it as one and be Oklahoma Proud.

So Dragon is wanting to have me watch this new series he found on netflix. Hemlock grove.... it is weird so say the least. On episode 3 now.

A quick fun treat

No Bon Fire required.

Someone on my facebook shared a version of this yumminess. When I saw it my first thought was yumm but my second thought was.... ummm the crumb part is not going to exit the muffin tin in one piece. So of course I went to altering this so I could make it cause like I said it looked yumm.

Cast of Characters

 

Picture is upside down I know but think of it as one of those keep your brain sharp puzzles. LOL!

1 bag of large marshmallows
2 tbls chocolate icing
.5 tsp cinnomon
4 tsp sugar
.25 cup melted butter
6 hershey bars
box of graham cracker crumbs


Spray a 13x9 pan with buttered flavored oil.
mix crumbs , sugar, cinnomon and melted butter with a fork till well mixed.
press crumb mixture into bottom of the pan and up the sides.
bake for 10 - 15 min at 350 degrees or until crumbs are golden brown
Break chocolate bars in half while crust is backing
When crust comes out of oven place bars in a single layer on top of crust
place marshmallows in a single layer on top of bars... both bars and mallows will start to melt
place back in oven for 5 min
Microwave icing for 15 sec so it can be drizzled over mallows

Let cool for 10 min before serving OR let cool and put in fridge to serve later. This is good cool and warm.
